Noble Bootleggers
Noble Bootleggers began behind the bar, founded by Daniel and Kristin, who met in Melbourne’s hospitality scene before creating The Noble Experiment - a New York-style speakeasy known for bold, immersive cocktails. After a guest suggested taking the experience beyond the bar, they sold the venue in 2018, began distilling in their garage, and later moved operations to “Whisky Hill Farm” in Longlea near Greater Bendigo.
Today, sustainability drives their small-batch craft. Spent botanicals are repurposed into soaps, feed, or soil boosters, and they collaborate with local producers to minimise waste. Their story is one of creativity, community, and purpose-craft spirits made with intention and ambition.

Masterclass - “The Secret Blend Behind Australia’s Best Whisky 2025”
Amber Lane's release “Equinox” was rated Australia’s best whisky at the Royal Australian Spirits Awards 2025. Join the man who created this blend, Amber Lane cellar master Rod Berry as he teaches you to how to create this whisky for yourself, using barrel samples taken straight from Amber Lane’s barrel warehouse.
Participants will be supplied with a syringe and barrel samples, and be taken step-by-step through the blending process. As you blend your own whisky, Rod will explain how techniques learned from the Cognac tradition are helping Amber Lane to forge a more elevated style of Australian whisky. Each participant will get to keep their own 50mL sample as a memento of the session.

Masterclass - Summer Drinks with Ester Spirits is a guided tasting and masterclass built around our award-winning Old Tom Gin, which took out Gold and Best in Show at the Australian Gin Awards 2025. Join Felix, co-founder and head distiller at Ester, as we explore the gin itself alongside a selection of cocktails and a house-made liqueur, all tied to Old Tom and designed with warm weather and good hosting in mind. This session is about understanding flavour, balance and versatility, and why Old Tom is such a natural foundation for summer drinking.
Participants will be taken step by step through each drink, with insight into the processes and decisions behind how we make our spirits in Sydney’s Inner West. Along the way, we’ll focus on practical tips for entertaining: how to build, garnish and serve with confidence, whether it’s a long lunch or a late-afternoon gathering. Expect generous pours, considered technique, and plenty of ideas to take home and put straight into practice.
